CANESTRATO PUGLIESE DOP

 Its name comes from the fact that the cheese, put in rush baskets, during the first phase of maturation, took the streaks of reeds in the reed basket that the same, with the pressure, did take the cheese.
It is a cheese that is produced with ewes "kind of Apulia."
The forms have a weight that ranges from 7 to 12 pounds and with a diameter of about 25/30 cm. Flavor, intense aroma. The seasoning varies from a minimum of 2 months to over a year.
The use in the kitchen is not really infinite. I see it, in my humble opinion, served as an appetizer with honey or with the chutney or cognà, to dilute the flavor perhaps too aggressive. Accompanied by an excellent red wine is a full-fledged meal by King!
