PASTA AND BEANS




 ingredients for 4 persons:

300 grams of dried pinto beans
150 grams of pasta type "Ditali"
50 grams of bacon
3 tablespoons of tomato paste
rosemary, garlic, oil, pepper
celery, carrots

preparation:
Put the beans in a pot of cold water and let stand overnight.
Make a fry with oil  rosemary, bacon and garlic.

















Then put beans and 2 liter of water.

















Close the lid and cook over low heat for about 2 hours.
If you notice that the cooking liquid is reduced by half, add a couple of ladles of water.
Put then the tomato paste, the chopped carrot, celery and pasta.
When the soup is cooked take it in a terra-cotta pots and serve.
Enjoy with a Chianti Superiore.
