HOMEMADE TAGLIATELLE WITH SPECK AND ARUGOLA - TAGLIATELLE CASARECCE CON SPECK E RUCOLA

Ingredienti per 4 persone
Per le tagliatelle:
200 grammi di farina di semola di grano duro
2 uova
sale

Per il condimento:
10 fette di speck
100 grammi di funghi champignons
1 mazzetto di rucola
1 bicchiere di vino bianco

Preparazione:

Ingredients for 4 people
For the tagliatelle:
200 grams of flour durum wheat flour
2 eggs
salt

For the sauce:
10 slices of bacon
100 grams of mushrooms
1 bunch arugula
1 glass of white wine

preparation:
Begin preparing the dough for the tagliatelle. Now the choices are two: either knead by hand, creating the famous fountain, or put all the ingredients into the mixer, and if I can give some advice on the mixer is less strenuous but does not give the same results of your hands. Consequently sciegliete you!
Finished kneading take the appropriate machine for the dough, flour the dough and pass it before the rollers reducing the thickness of a step at a time. Just say will reach the thickness of about 2 mm, put in the rollers for the noodles. Spread the product and let dry slightly.

At this point, take a pan quite wide, saute an onion with a little 'oil and add the mushrooms causing him to lose the water of vegetation. Cook for a few minutes then put the white wine and let it evaporate.
Add the bacon at the end. Turn off the heat. Meanwhile, boil the water, put the noodles.
Once ready, drain and put into the pan blasting few minutes on a low. Add to the last the arugula,  and serve.

Great to enjoy with a high Adige Gewürztraminer.

Flamed skin to burn unwanted hair.
Now put it in a cutting board and carve the skin to "X" at an angle.

Take a pan and put the duck breast skin side down , oil and cold water ( this process is used to melt the fat in access . If the pan is hot , says Chef Gordon Ramsay , you risk , the fat , only to seal it and not to delete it) .
Browned evenly throughout the piece , about 4 minutes per side.

When you have everything you have browned on top (where you recorded for instance) a tablespoon of honey and put in the oven for about 6 /7 minutes .

Ingredienti per 4 persone:
2 petti di anatra aperti a ventaglio (di conseguenza 4 porzioni)
80 grammi di rucola fresca
140 grammi di mirtilli
50 grammi di burro
1 cucchiaio di aceto balsamico glassato
1 cucchiaio di timo secco
1 mezzo bicchiere di latte
4 cucchiai di miele di castagno
4 cucchiai di olio
Pepe, sale

Preparazione:

With this my experiment of risotto, I wanted to try to combine different scents and different flavors to try to find something new, different from the usual stuff. I've mostly used the jasmine tea for its aroma and its qualitative properties, the Levisticum (an herb similar in flavor to lovage, almost similar to the smell and taste of licorice) for its flavor and consists of rhubarb for his character and his consistency. I must say that it has come something of great even if you have to get used to all 3 flavors. Let me, maybe you know, what you think!

Ingredients for 2 people:
180 grams Arborio rice
1 packet of tea with jasmine
1 teaspoon full of dried Levisticum
1 teaspoon full of rhubarb compote
half a glass of white wine
shallot
butter and Parmesan to thicken
salt

Preparation:
Prepare a liter and a half of water. When it boils, add the tea bag and make an infusion of jasmine, adding 2 or 3 pinches of dried leaves Levisticum (keep half a teaspoon to be added later). Meanwhile, prepare them in a pan or a sauté pan with olive oil and finely chopped shallots. A golden brown roasted rice obtained so be deglaze with white wine. Take all the alcohol evaporate, then add 3/4 scoops of jasmine tea (put again when u see risotto is drying) and cook for about 20 minutes, stirring frequently for the rice does not stick to the bottom. When you miss 5 minutes, add the teaspoon of rhubarb compote and the remaining half teaspoon of Levisticum.
Stir in butter and Parmesan cheese, then serve hot. If you want to add a crispy component, add a teaspoon of toasted sesame seeds.
