SALAD OF OCTOPUS WITH FRESH BROAD BEANS AND MUSCARI COMOSUM - INSALATA FREDDA DI POLIPO CON FAVE FRESCHE E LAMPAGIONI
the "Muscari comosum", commonly called in Italian "lampagione", is a bulb of a plant that grows in the regions of southern Italy and especially in Basilicata and Puglia. The slightly bitter taste and crunchy texture make it very special and attractive. I wanted to combine it with the taste of the sea that the octopus has the sweetness and aroma of the beans raw potatoes. Eventually led to a dish full of flavor with different textures and smells wonderful.
Ingredients for 4 people:
1 polyp from rock weighing about 1.5 kilograms
100 grams of oil lampagioni
100 grams of peeled raw beans
2 boiled potatoes previously
oil, lemon, parsley
salt, chili
Preparation:
Wash the octopus thoroughly in cold water,
then place in a saucepan with a little water, a little salt, and a glass of good white wine. Close the lid and cook on low heat for 45 minutes. Turn it every so often so that it will cook evenly. After this time tasted and check for doneness you prefer: for example, I love the octopus does not just soft. Its consistency should be "callous" but of course edible and digestible then. If passed the 45 minutes you do not like the texture yet, cook for another 10 minutes. When cooked, cut into pieces not very big and place in a salad bowl with potatoes, lampagioni, peeled fava beans, olive oil, lemon, parsley and coarsely chopped chilli (if approved) finely chopped. Serve at room temperature
Servite a temperatura ambiente
